Zucchini and Feta Slices

Egg and zucchini slices filled with feta cheese and plenty of fresh herbs!

ingredients

2 cups zucchini, shredded and squeezed to drain
1/2 cup onion, diced (or 1 leek, sliced)
4 green onions, sliced
2 tablespoons dill, chopped (or 2 teaspoons dried dill)
2 tablespoons mint, chopped (or 2 teaspoons dried mint)
1 cup feta cheese, crumbled
1 cup mozzarella cheese, shredded
1 cup all-purpose flour (gluten-free for gluten-free)
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon pepper
5 eggs
1/4 cup olive oil

directions

Mix the zucchini, onion, green onions, dill, mint, feta, and mozzarella.
Mix the flour, baking powder, salt, and pepper and then mix it into the zucchini mixture.
Mix the eggs and oil and then mix it into the zucchini mixture.
Pour the mixture into a gread (or foil lined) 8×8 inch baking pan and bake in a preheated 350F/180C oven for 40-45 minutes; a toothpick pushed into the center should come out clean when done.
Let cool, slice and enjoy!

Option: Add 2 tablespoons parsley, chopped.
Option: For the fresh herbs, use any combination of dill, mint, and parsley.
Option: Use gruyere instead of mozzarella.
