This honey mustard chicken with crunchy slaw is so refreshing, crisp and satisfying. It’s a great easy dinner when you want something light but filling. And it comes together really fast.
It’s also such a good meal that you can make ahead of time for lunch! The slaw stays crunchy and crisp, the chicken is fabulous if it’s warm or chilled. You can’t go wrong!

You may be thinking that this looks familiar because I have a similar recipe with a different flavor profile. It’s exactly where I got the inspiration for this one.

You guys know how much I love honey mustard EVERYTHING. My honey mustard chicken salad is one of my favorite salads in the world. My grilled honey mustard chicken thighs are also incredible! SO I just knew that the same sort of meal would work with honey mustard flavors.
Whether you combine it and make it into a (slaw) salad or even a dish that has rice on the side, the flavors are amazing.

See, I make honey mustard chicken like this often. At least once a month. It’s an easy way to prep chicken with minimal ingredients and a ton of flavor. And I always have the ingredients in my house.
This method comes from that one I’ve been using for almost 15 years: broiled chicken thighs brushed with apple cider vinegar and honey. I’ve talked about it so many times! Except in this case, I also add dijon to the mix. It gives it this sticky, tangy and saucy coating which is just divine. And it is SO super easy to make.

I also love when the chicken is practically charred to death, so that’s why grilling or broiling is my preferred method of making.

Here’s how I make it!
The key is to prep the slaw first so it’s ready to go. You can even slice all the ingredients the day before and store them in the fridge.
I also dress the slaw ahead of time! I like it best when it’s sat for 15 to 30 minutes. So I do all that, the chopping and dressing, right before I start the chicken.

When it comes to the chicken, that’s easy. Season it all over. Place it under the broiler. It might smoke a little bit because you want it CLOSE to that broiler. We want that chicken charred! I do about six minutes per side.
While it broils, whisk together the honey, dijon and apple cider vinegar. After both sides have been broiled, brush the mixture on the chicken and broil for an additional 1 minute. Flip, brush again, and broil for another minute. I do this twice per side, usually for a total of four times. Sometimes six if I want it extra honey mustardy and sticky.

I let the chicken rest for a few minutes then slice! It’s so easy. Pile it on top of (or next to) the slaw.
Eat up! It’s so fantastic. Tangy chicken. Crunchy slaw with some lime and honey. The combination is MAGIC.

Sticky Honey Mustard Chicken with Crunchy Slaw
This sticky honey mustard chicken is delightful! It’s easy and quick, tangy and flavorful and tastes amazing. Serve it over a crunchy, refreshing honey lime slaw for the perfect weekday lunch or dinner!

In a large bowl, combine the cabbage, carrots, cilantro and red onion. In a small bowl, whisk together the lime juice, honey, garlic, salt and pepper. Whisk in the oil until emulsified.
Pour the dressing over the slaw and toss well so everything is coated. Once the slaw is ready, slice the chicken thighs and place them on top of the slaw.

To make the chicken, heat your broiler to high and make sure the oven rack is directly below (or two below).
Season the chicken all over with salt, pepper, the smoked paprika and garlic powder. Place it on a baking sheet. Broil for 6 minutes, then flip and broil for 6 minutes more. While the chicken is broiling, whisk together the mustard, honey and vinegar.
As soon as the chicken is finished, brush with the honey mustard mixture. Return and broil for 1 minute. Flip the chicken and brush it again with the honey mustard. Broil for another minute. You can repeat this 1 or 2 more times, broiling for 30 seconds to 1 minute after each. When the chicken is done, brush more honey mustard on it and let it rest for 10 minutes.
Slice the chicken and serve over the slaw!
