Slow Cooker Chicken Teriyaki

Teriyaki chicken that’s as simple as throwing everything into the slow cooker in the morning and it’s ready to go in 5 minutes of effort when you get home at night!

ingredients

1 pound boneless and skinless chicken breasts or thighs
1 onion, sliced or diced
1 tablespoon garlic, minced/grated
1 tablespoon ginger, minced/grated
2 tablespoon soy sauce (gluten-free for gluten-free)
2 tablespoon sake (optional)
2 tablespoon mirin (optional)
2 tablespoon sugar
1 tablespoon rice vinegar (optional)
1/2 cup water (or chicken broth (link))
2 tablespoons water
1 tablespoon cornstarch
1 teaspoon toasted sesame oil (optional)
1 tablespoon toasted sesame seeds (optional)
4 green onions, thinly sliced (optional)

directions

Place the chicken and onion in a slow cooker and pour over the mixture of the garlic, ginger, soy sauce, sake, mirin, sugar, vinegar, and water and cook on LOW for 8-10 hours or on HIGH for 3-4 hours.
Remove the chicken and shred.
Pour the liquid and everything else in the slow cooker into a saucepan, add the mixture of the 2 tablespoons of water and the cornstarch, bring to a boil, reduce heat and simmer until the sauce thickens, about 3-5 minutes.
Mix the chicken, sauce, sesame oil, sesame seeds and green onions and enjoy!

Option: Replace the sugar with brown sugar, maple syrup, honey, etc.
Option: Add vegetables!
