There is nothing I love more for a breakfast cocktail than a Mimosa and this Pomegranate & Blood Orange Mimosa Cocktail is especially beautiful!

A striking dark pink cocktail made from combining pomegranate and blood orange juices, topped with Prosecco or Champagne for a lovely Mimosa.

I don’t think I’ve ever made a Mimosa that wasn’t going to be served for brunch, have you? It must the the orange juice component that makes it seem so appropriate for morning and this year it’s going to be this beautiful Pomegranate & Blood Orange Mimosa Cocktail.

I apologize that I didn’t deliver this recipe earlier, it would be perfect for Mother’s Day tomorrow. Unfortunately it didn’t come about until a friend and I decided to make a cocktail earlier today and I used what I had in the fridge. It was good enough to include here, so I grabbed a couple of quick snaps; we had our brunch and now I’m busy writing this post…you might still make it for tomorrow!

I love Mimosas but I can’t stop fiddling with them; once I started adding liqueurs or other juices to the mix they’ve become a bit like margaritas…the sky is the limit! For me it’s seems that the beginning of spring is the advent of my Mimosa drinking and Easter Brunch signals the day and I find reason through the year to serve them often; especially over holidays.

Maybe it’s the glassware? There is something about champagne glasses that calls for a special occasion and brunches usually are just that. I just bought some new champagne glasses too…but I wanted them for another cocktail so this year I’m featuring a couple of the prettiest glasses I have…from Goodwill! I may never find two of a kind which I prefer but I have found some gorgeous single glasses and they work perfectly.

I’ve got some pretty sets of glassware but honestly if I were starting over, I would go the route I currently love; no matching glasses. There is something charming about having mismatched glassware and your local thrifts stores are your friend!

My original thought for this Pomegranate & Blood Orange Mimosa didn’t include pomegranate juice but those plans went awry when I started to juice the blood oranges I had and realized I wouldn’t have enough juice.

What did I have? Right there, right in front of me…a bottle of Pomegranate Juice I had put in the fridge to chill…for whenever, and I simply knew that combining the two would be perfect.

I loved this; mostly because the color would not be compromised; I wanted that vibrant pink color…these would also have been great for Easter with the Creamed Eggs on Toast Points I make every Easter morning but no worries, this Pomegranate & Blood Orange Mimosa Cocktail added a lot of sophistication to our really simple brunch where we feasted on this Spinach and Mushroom Quiche.

So easy to  make too. I combined the juices and the orange liqueur and refrigerated the mixture while the quiche baked, along with a couple of bottles of the sparkling wine I’ll use. This time around it was Prosecco from Italy but I’ll also use Champagne, Spanish Cava, or an American sparkling wine. Combining the two as they’re served makes certain the cocktail benefits from the bubbly.

Beyond Easter and Mother’s Day, the Pomegranate and Blood Orange Mimosa Cocktail would be perfect for any spring or summer holiday event, lovely for a wedding reception or a New Years Day brunch? But you don’t have to be a mom or get married to enjoy them; just have some friends over, pop the cork and sip away. They’re perfect and perfectly beautiful too…Cheers!

Pomegranate and Blood Orange Mimosa Cocktail

A beautiful take on a Mimosa combining Pomegranate and Blood Orange Juice with Prosecco.

Total Time 10 minutes

Course Champagne, Prosecco and Cava

Servings 8 -10 Servings

Calories 150 kcal

4 cups pomegranate Juice chilled2 cups blood orange juice chilled (Use regular OJ if blood oranges are not available)4 ounces orange liqueur750 ml Prosecco full bottle, chilled

Combine the pomegranate juice, orange juice and orange liqueur in a pitcher. Stir well to combine and chill together for at least 30 minutes.

Fill champagne glasses two-thirds full with juice combination and top off with Prosecco.

Cheers!

If pomegranates are in season; top each glass with some pomegranate seeds.
