Monterey Chicken Sandwich

A tasty sandwich with BBQ chicken, melted cheese, bacon, lettuce and tomato!
ingredients
1 pound boneless and skinless chicken breasts or thighs, thinly sliced or cut into bite sized pieces
2 tablespoons oil (or mayonnaise)
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1/2 teaspoon cayenne
8 strips bacon
1/4 cup BBQ sauce
4 slices cheese (cheddar, or jack, etc.)
4 buns or 8 slices of bread (gluten-free for gluten-free)
1/4 cup mayonnaise (optional)
4 leaves lettuce
1 large tomato, sliced
1/4 cup red onion thinly sliced
directions
Marinate the chicken in the mixture of oil, garlic, salt, pepper, paprika, and cayenne, covered, in the fridge, for 20 minutes to overnight.
Cook the bacon in a large skillet before setting aside on paper towels to drain and removing the excess grease from the pan.
Cook the chicken in a skillet over medium heat until cooked through, about 10-15
Mix in the BBQ sauce.
Place the cheese slices on top and let them melt before turning off the heat.
Assemble the sandwiches with buns, mayo, lettuce, tomato, onion, bacon and chicken and enjoy!
Option: Add 1 avocado, sliced.
