Mississippi Mud Potatoes

Tender potatoes and bacon in a creamy sauce smothered in melted cheese!
ingredients
8 ounces bacon, cooked and crumbled (optional)
3 pounds yellow potatoes, peeled and cut into 1/2 inch cubes
1 teaspoon garlic powder (optional)
1 teaspoon onion powder (optional)
1 teaspoon (smoked) paprika (optional)
salt and pepper, to taste
1 tablespoon Dijon mustard (optional)
1/2 cup mayonnaise
1/2 cup sour cream
4 green onions, sliced sliced and divided (lights and greens)
1 cup cheddar cheese, shredded
1 cup pepper jack cheese, shredded
directions
Cook the bacon in a pan before setting aside on paper towels to drain.
Toss the potatoes and bacon in the mixture of the garlic powder, onion powder, paprika, salt, pepper, mustard, mayo, sour cream, the lights of the green onions, and half of the cheese.
Place the potatoes into a greased 9×13 inch baking and sprinkle on the remaining cheese.
Bake, covered in foil, in a preheated 250F/130C oven until the potatoes start to get tender and the sides are bubbling about 1 hour, remove the foil and cook until the top is golden brown, about 20 minutes.
Sprinkle on the greens of the green onions and enjoy!
Option: To cut down on baking time, partially pre-cook the diced potatoes by boiling them in water for 10 minutes.
Option: Add 1 pinch of cayenne or a splash of hot sauce!
Option: Add 1 onion, diced, cook in the bacon grease before mixing in with the potatoes to bake.
Option: Add 4 cloves garlic, chopped, cook in the bacon grease before mixing in with the potatoes to bake.
Option: Replace the jack cheese with mozzarella, gouda, swiss, gruyere, etc.
