This marry me cauliflower is incredibly cozy and delicious, served in a cream sauce with sun dried tomatoes, spinach and lots of parmesan, then spooned over rice for the perfect bowl. 

It’s the best meal that you can make for your Valentine this week, aka, YOURSELF!

Truly. This has to be on your menu this week. Even if you make it for lunch. Breakfast! Whenever the mood strikes, you should definitely prepare this and enjoy it over a big bowl of rice.

I generally dislike the term “marry me” in front of any food, but it’s caught on so much for this flavor combination that I didn’t know what else to call it! Plus, I think I like it more with the cauliflower than I do with chicken. And that’s saying something. 

The traditional “marry me” combo contains cream, parmesan, sun dried tomatoes, basil and lots of garlic. It’s delightful and no wonder everyone loves it! The sun dried tomatoes are a little tangy and sweet, the cheese is savory and nutty, the spinach and basil is fresh and bright and the cream sauce is cozy and comforting.

If you follow my substack, then you got this recipe last fall! I was making this on repeat for weeks because it was so freaking good. I shared a sneak peek in October with substack subscribers because I had shared it with everyone else in real life that I knew. And I wanted more people to know just how fabulous it is.

It’s like a cozy soup without being an actual soup. A big warm hug, a delicious skillet that is so soul warming and comforting. I love having it over rice because the rice soaks up all the sauce. It reminds me a bit of curry in that way – sauce and rice could be a full meal for me. I wouldn’t complain! 

It’s like a casserole without being a casserole! What I’m trying to say is that it’s the ideal cozy meal that feels like home. Like love!

This is how I make it!

I start by browning the cauliflower. This gives it a bit of flavor and also slightly softens it so it isn’t too crisp. Once it’s golden, I remove it from the pan. 

In the same pan, I add all the good stuff. Onions, garlic, sun dried tomatoes! Some basil and oregano, spinach – all the goodness. 

Once that is softened, I add in some heavy cream and chicken stock. You can use vegetable stock too, I just prefer the flavor of chicken! Then it comes time for parmesan. The ultimate savory sauce maker.

The cauliflower goes back into the pan and everything comes together and gets even more delicious! 

Spoon over jasmine rice and you will be in HEAVEN. You can even serve it over pasta if you wish. Or another grain!

This marry me cauliflower is a cozy, comforting skillet dish that comes together quickly! Toasty cauliflower is mixed with sun dried tomatoes, garlic and spinach in a creamy sauce with tons of parmesan cheese. Serve over rice and fall in love!

Heat the oil in a large skillet over medium heat. Add the cauliflower florets with a big pinch of salt and pepper. Cook, tossing often, until the cauliflower is tender and golden brown.

Transfer the cauliflower out of the pan. There should still be some oil in the pan – if not, add another drop from the jar of sun dried tomatoes. Add the onions and garlic with a pinch of salt and pepper. Add the basil and oregano. Cook until softened, about 3 to 5 minutes. Stir in the sun dried tomatoes. Stir in the spinach and cook until it wilts completely.

Add in the stock and the heavy cream. Bring it to a boil then turn the heat down to low. Stir in the parmesan cheese and stir until it melts completely. Add the cauliflower back into the sauce. Top with fresh basil. Taste and season more if necessary.

Serve the cauliflower over rice with extra parmesan cheese!
