Jalapeno Popper Chicken Sandwiches

Quick and easy chicken sandwiches with cream cheese, cheddar cheese and jalapenos!
ingredients
1 pound boneless and skinless chicken thighs or breasts, thinly sliced or cut into bite sized pieces
2 tablespoons oil (or mayonnaise)
1 tablespoon ranch seasoning *
1/2 teaspoon oregano
1/2 teaspoon cayenne (optional)
1/2 teaspoon salt
1/2 teaspoon pepper
1 small onion, diced
1/2 tablespoon soy sauce (optional) (gluten-free or tamari for gluten-free)
1/2 tablespoon Worcestershire sauce (optional) (gluten-free for gluten-free)
1/4 cup pickled jalapeno, sliced (link)
2 ounces cream cheese, room temperature
1 cup cheddar cheese, shredded
4 hoagies/buns/rolls, cut in half (optionally toasted) (gluten-free for gluten-free)
directions
Marinate the chicken in the mixture of oil, ranch seasoning, oregano, cayenne, salt, pepper, covered, in the fridge, for 20 minutes to overnight.
Cook the chicken and onion in a skillet over medium heat until cooked through, about 10-15.
Add the soy sauce, Worcestershire sauce, and jalapenos, and mix.
Add the cream cheese and cheddar cheese, mix and let it melt into the sauce.
Divide the mixture between buns and enjoy!
Option: * Use store bought or make you own: 1 teaspoon dried parsley, 1 teaspoon dried dill, 1 teaspoon dried chives, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder. 1/4 teaspoon salt, 1/4 teaspoon pepper.
Option: Add 4 strips bacon, sliced, cooked and crumbled.
Option: Replace the pickled jalapeno with fresh jalapenos, sliced, added along with the onion.
Option: Add your favourite sandwich fillers, such as lettuce, tomatoes, pickles, etc.!
