Grinder Pasta Salad

All of the flavours of a grinder sandwich in a creamy pasta salad!
ingredients
For the salad:
1 pound pasta (gluten-free for gluten-free)
2 cups lettuce, shredded or sliced
1 cup tomato, diced
1/4 cup red onion, sliced
1/4 cup pepperoncini, sliced
1/2 cup provolone, chopped
1/2 cup salami, chopped
1/2 cup pepperoni, chopped
For the dressing:
1/3 cup mayonnaise
1 tablespoon red wine vinegar
1 teaspoon oregano (or Italian seasoning (link))
1 small clove garlic, minced/grated
2 tablespoons parmigiano reggiano (parmesan), grated
1/2 teaspoon red pepper flakes (optional)
1/2 teaspoon salt
1/2 teaspoon pepper
directions
Cook the pasta as directed on the package, drain and rinse in cold water until the pasta has cooled.
Assemble the salad, toss with the dressing and enjoy!
For the dressing:
Mix everything well.
Option: Use your favourite salad/grinder ingredients!
Option: Add 1-2 tablespoons of the pickling juice from the pepperoncini jar!
