Garlic Butter Zucchini

Zucchini served garlic bread style; roasted and smothered in butter and garlic!

ingredients

2 medium zucchini, cut in half lengthwise
1 tablespoon olive oil
salt and pepper to taste
2 tablespoon butter, softened
2 cloves garlic, grated/minced
1 tablespoon parsley, chopped
1/2 teaspoon lemon zest (optional)
1 tablespoon parmigiano reggiano (parmesan cheese), grated

directions

Brush the zucchini on all sides with oil, season with salt and pepper to taste and place, cut side down, along the outsides of a baking sheet.
Bake in a preheated 450F/230C oven, on the lower shelf, for 10 minutes.
Transfer to the top oven shelf and broil for 10 minutes.
Meanwhile, mix the butter, garlic, parsley, and lemon zest.
Flip the zucchini, spread the butter mixture on, sprinkle on the parmesan and enjoy!

Option: If you want to mellow the garlic a bit: Melt the butter in a small saucepan, add the garlic and cook until fragrant, about 30 seconds, before mixing in the parsley and lemon zest and spreading on the zucchini.
Option: Grill the zucchini!
