A flavorful sauce often used to top fish, meat, vegetables, salads, or other dishes, chermoula sauce originated in Morocco. It’s super tasty and easy to make.
Some people like their chermoula sauce super spicy, so they add a touch of cayenne pepper or red pepper flakes, or something to spice it up more. However, I like to stick with just cumin, paprika, and garlic for my spices.
Ingredients
Cilantro: Fresh cilantro is the bulk of this recipe.
Parsley: A good amount of fresh parsley is also added.
Olive oil: Most of the liquid in this sauce is olive oil, to help it process well.
Lemon juice and zest: Add a punch of citrusy flavor with some lemon juice and zest.
Garlic: Much of the flavor of this sauce comes from the garlic. I use fresh garlic cloves.
Cumin powder: Add some more great flavor with cumin powder.
Paprika: Punch up the flavor with some paprika.
Serving Suggestions
Take a block of extra firm tofu and slice into about six to eight slices. Spread them over a baking sheet and preheat the oven to 350 degrees. Melt about two tablespoons of butter or margarine in the microwave and then brush some over each tofu slice. Then add a spoonful of the chermoula sauce over each tofu slice. Bake the tofu in the oven for 15 minutes, take it out, flip it with a spatula, coat the other side in butter and chermoula sauce also, then bake for 10 to 15 more minutes, then serve.
Chermoula sauce also goes great on fish, such as salmon, if you’re a pescatarian or omnivore.
A great side dish for the chermoula tofu or chermoula salmon is my rice pilaf with summer vegetables. It’s truly a mouthwatering combination that will make you think you are dining out at a fancy bistro.

Easy Chermoula Sauce Recipe
Chop the cilantro, measure out one cup, rinse in a colander, and add it to the food processor.
Chop the parsley, measure out half a cup, rinse in a colander, and add it to the food processor.
Zest the lemon for a tablespoon of lemon zest, and add it to the food processor.
Chop the lemon in fourths and squeeze the juice into the food processor.
Add the olive oil to the food processor.
Peel and chop the garlic, rinse it, and add to the food processor.
Add cumin and paprika to the food processor, plug it in, attach the lid, and pulse it until all the ingredients are combined in a consistency similar to pesto.
