Crispy Hot Honey Feta Chicken

Chicken coated in crumbled corn flakes, baked until crispy and topped with melted feta before pouring on hot honey!
ingredients
For the chicken:
1/2 cup all-purpose flour (gluten-free for gluten-free)
1 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 large eggs, beaten
2 tablespoons hot sauce
2 cups corn flake crumbs (or breadcrumbs) (gluten-free for gluten-free)
1/4 cup parmigiano reggiano (parmesan cheese), grated
1 pound boneless and skinless chicken breasts or thighs, pounded thin
6 ounces feta, crumbled
For the hot honey:
1/4 cup honey
2 tablespoons hot sauce (such as Frank Red Hot)
1 teaspoon red pepper flakes
1/2 teaspoon (smoked) paprika

For the chicken:
Mix the flour, paprika, onion powder, and garlic powder in a wide bowl.
Mix the eggs and hot sauce in a wide bowl.
Mix the corn flake crumbs in a wide bowl.
Lightly dust the chicken in the flour mixture, shaking off any excess.
Dip the chicken in the egg mixture, shaking off any excess.
Press the chicken into the crumb mixture to coat on all sides and shake off any excess.
Place the chicken on a wire rack on a baking pan an optionally sprayed lightly with oil
Bake in a preheated 425F/220C until golden brown and cooked (165F), about 20-30 minutes.
Sprinkle on the feta and bake until the feta starts to lightly brown on top, about 5 minutes.
10 Serve topped with hot honey!
For the hot honey:
Mix everything and let sit for a while.
Option: Fry the chicken in oil instead of baking; top with feta and broil after.
