How to Make Mango Habanero Wings

Follow along with my simple step-by-step instructions to learn how to make Mango Habanero wings in your home kitchen.

Preheat oven to 425 degrees.

Cut the wings into three sections, discarding the wing tips, or saving them for soup.

Pat the chicken dry with a paper towel.

Add the garlic powder, sweet paprika, brown sugar, and salt to a small bowl.

Mix the dry seasonings to combine.

Coat the wings with the dry seasoning rub.

Place the seasoned chicken on a wire rack to marinate for 20-30 minutes. This will give the chicken time to come to room temperature.

Place the baking sheet on the middle rack of the preheated oven and bake for 40-45 minutes. While the chicken is cooking, make the sauce.

Add the mango, habanero peppers, garlic, apple cider vinegar, lemon juice, salt, and honey to the bowl of a food processor.

Pulse on low until the texture is smooth.

Pour the pureed mixture into a small saucepan over medium-high heat.

Bring the mixture to a light boil, then reduce the heat and simmer for 10 minutes. Remove the pan from the heat and set aside until needed. 

Brush the cooked wings with the mango habanero sauce. 

Return the wings to the oven for 2-3 minutes to allow the sauce to cook into them.

Ingredients

2 pounds chicken wings -split at the joints (wingtips discarded or saved for soup)1 tablespoon brown sugar1 teaspoon garlic powder1 teaspoon sweet paprika1 teaspoon salt½ teaspoon black pepper

Sauce

1 cup mango -cut into cubes3-4 habanero peppers -deseeded and cut into chunks1 tablespoon garlic -chopped2 tablespoons apple cider vinegar1 tablespoon fresh lemon juice1 tablespoon honey½ teaspoon salt

Instructions 

Preheat oven to 425 degrees.

Add all seasoning ingredients to a bowl

Mix the dry seasonings to combine

Pat chicken wings dry with a paper towel

Coat all sides with the Chicken wing dry seasoning rub

Allow to marinate for 20-30 minutes while the chicken comes to room temperature

Place on a wire rack and a baking sheet and cook in a preheated 425-degree oven until the chicken wings reach an internal temperature of 165 degrees

Add the mango, habanero peppers, garlic, apple cider vinegar, lemon juice, salt, and honey to the bowl of a food processor

Turn the food processor on low until the texture is smooth

Once pureed, add the sauce to a sauce pot and heat over medium heat until it gets to a slight boil. Continue to simmer for an additional 10 minutes.

Once done, remove from heat and set aside until needed.

Once the wings reach an internal temperature of 165 degrees, remove them from the oven and brush the wings with the mango habanero sauce.

Return to the oven for 2-3 minutes so the sauce can cook into the wings.

Alternatively, you can just toss the wings in the sauce and serve them hot. We like the extra step of putting them back in the oven just so the sauce really sticks to the wings.
