Creamy 40 Clove Garlic Chicken Pasta

Chicken pasta in a creamy sauce with 40 cloves of garlic that’s simmered until tender mellow and oh so good!
ingredients
8 ounces pasta (gluten-free for gluten-free)
1 tablespoon oil
1 pound boneless and skinless chicken thighs (or breasts), cut into bite sized pieces
1/2 teaspoon (smoked) paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 onion, diced or sliced
2 whole heads of garlic, peeled
1/4 teaspoon thyme (optional)
1 cup chicken broth (link)
1 cup heavy/whipping cream
1/2 cup parmigiano reggiano (parmesan cheese), grated
salt and pepper to taste
directions
Start cooking the pasta as directed on the package.
Meanwhile, heat the oil in a large pan over medium-high heat, add the chicken, seasoned with the paprika, onion powder, and garlic powder, and onion and cook, about 10 minutes.
Add the garlic and thyme and cook until fragrant, about a minute.
Add the broth and deglaze the pan by scraping any brown bits off the bottom of the pan as the broth sizzles.
Bring to a boil, reduce the heat and simmer, covered, until the garlic is super tender, about 10 minutes.
Mix in the cream and parmesan before seasoning with salt and pepper to taste.
Toss the cooked and drained pasta, optionally added reserved pasta cooking water to bring the sauce to the desired consistency, and enjoy!
Option: Serve garnished with chopped parsley.
Option: Add a vegetable such as green beans, spinach, etc..
