Chicken Gnocchi in a Creamy Tomato Sauce

Chicken and pillowy potato gnocchi in a tasty tomato sauce!

ingredients

2 tablespoons olive oil (or sun-dried tomato oil)
1 pound boneless skinless chicken breasts or thighs, cut into bite sized pieces
1 onion, diced
3 cloves garlic, chopped
2 tablespoon tomato paste (optional)
1/2 teaspoon red pepper flakes (optional)
1/2 teaspoon ground fennel seeds (optional)
2 cups chicken broth (link) (or water)
1 (15 ounce) can diced tomatoes
1/4 cup sun-dried tomatoes, thinly sliced (optional)
1 teaspoon Italian seasoning (link) (or oregano)
1 pound gnocchi (link) (gluten-free for gluten-free)
1/2 cup heavy/whipping cream (or sour cream, or 4 ounces cream cheese)
1/4 cup parmigiano reggiano (parmesan cheese), grated
4 ounces baby spinach (optional)
salt & pepper to taste
1 tablespoon parsley (or basil), chopped (optional)

directions

Heat the oil in a large skillet/pan over medium-high heat, add the chicken and onion and cook, until the chicken is cooked, about 7-10 minutes.
Add the garlic, tomato paste, red pepper flakes, and fennel seeds, mix and cook for a minute.
Add the broth, diced tomatoes, sun-dried tomatoes, Italian seasoning, and gnocchi, bring to a boil, reduce the heat and simmer until the gnocchi is tender, about 5-10 minutes.
Turn off the heat, add the cream and cheese, mix, and let the cheese melt into the sauce.
Add the spinach, mix and let it wilt.
Season with salt and pepper to taste, mix in the parsley and enjoy!

Option: Season your chicken with your favourite seasoning, I like: 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon (smoked) paprika, 1/2 teaspoon salt, 1/2 teaspoon pepper
Option: Add vegetables such as diced bell peppers, peas, carrots, etc.
