Chicken Caesar Salad Sandwich

All of the flavours of a caesar salad in a sandwich with tender seasoned chicken and pepperoni!

ingredients

1 pound boneless and skinless chicken breasts or thighs, cut into bite sized pieces
2 tablespoons mayonnaise (or oil)
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1/2 teaspoon cayenne
2 cup romaine lettuce, thinly sliced
1/4 cup caesar dressing (link)
2 tablespoons parmigiano reggiano (parmesan cheese), grated or shaved
1/2 cup croutons, crumbled
4 buns or 8 slices of bread (gluten-free for gluten-free)
2 ounces pepperoni

directions

Marinate the chicken in the mixture of mayo, garlic, salt, pepper, paprika, and cayenne, covered, in the fridge, for 20 minutes to overnight.
Cook the chicken in a skillet over medium heat until cooked through, about 10-15.
Mix the lettuce, dressing, parmesan, and croutons.
Assemble the sandwich with pepperoni, chicken, caesar salad and enjoy!

Option: Omit the pepperoni or replace with bacon or sliced sundried tomatoes!
Option: Add 1 large tomato, sliced.
Option: Add 1 avocado, diced.
Option: Add 1/4 cup red onion thinly sliced.
