This caramelized onion beef stew is incredibly hearty and soul warming! Huge tender, juicy chunks of beef mixed with potatoes, carrots, mushrooms and caramely onions all in a rich thyme-laced broth.

I adore all soups – there isn’t one that I’d kick out of bed. Especially if caramelized onions are involved.
Beef and caramelized onions are such a fabulous combo, and beef broth is often the base for french onion soup. I often make a pot roast with caramelized onions and knew that turning this combo into a soup would be the ultimate flavor player.

There were a few key things I wanted to focus on with the soup: I didn’t want it to be brothy, but I also didn’t want it to be creamy. I wanted a nice base that was rich in flavor and texture without seeming overly souping. It’s a win here!
I also wanted it to be PACKED with ingredients. Lots of tender vegetables that melt into the soup. Golden potatoes, huge chunks of carrots, soft bits of mushrooms. Every bite having its own bit of flavor

This is how I make it!
First – the beef. I season it, toss in flour then sear the heck out of it. Just until it has a deep golden crust. Then set it aside.
Next, the onions. These need time to caramelize so it will take awhile. Throw them in the same pot and let them do their thing. They will soak up all the flavor from the beef bits too.

After an hour, add in the carrots, celery and mushrooms. Then the beef and the potatoes. And the stock!
Let it all simmer in a bubbly bath for at least an hour. A low and slow simmer. You want the beef to be fall-apart tender. It’s amazing!

I serve it just like this – the broth is so wonderful and rich. Snow and cold has nothing on this!

This cozy caramelized onion beef stew is chock full of nourishing ingredients and perfect for the blustery winter months. Juicy chunks of beef, tender potatoes, carrots and mushrooms all in a caramelized onion broth that’s packed with flavor. It’s incredible!
Heat the oil in a large stock pot over medium high heat. Toss the beef with a sprinkle of salt and pepper, then toss them with the flour so all the pieces are coated.
Add the beef to the pot and sear until each side is golden brown, about 1 to 2 minutes per side. You may need to do this in batches. Remove the beef with a slotted spoon and place them on a plate until ready to use.
Add the butter to that same pot. Add the onions with a big pinch of salt. Stir. Cook, stirring often, for 10 minutes until the onions softened. Reduce the heat to low. Cook for 1 hour, stirring often, until the onions are caramely.
Once caramelized, stir in the carrots, celery and mushrooms with a pinch of salt. Cook for 5 to 6 minutes.
Add in the potatoes and the beef. Add in the stock and thyme. Bring the mixture to a boil then reduce it to a simmer. Cover and let it simmer for 1 to 1.5 hours. The meat should be tender once done.
If you’d like it to be thicker at this point, you can always make a slurry! I take 1 cup of beef stock and 1 tablespoon of flour and shake them together for 30 seconds. Then I pour it into the pot and bring it to a boil until thickened, about 5 to 6 minutes.
Time to serve! Remove the sprigs of thyme and taste, seasoning more if needed. Grab bowls and serve immediately.
