Buffalo Chicken Pasta

A quick and easy pasta with all of the flavours of buffalo chicken!

ingredients

8 ounces pasta (gluten-free for gluten-free)
2 tablespoons butter
1/2 cup onion, diced or sliced
1/2 cup carrot, diced or sliced
1/2 cup celery, diced or sliced
3 cloves garlic, chopped garlic, chopped
1 1/2 cups chicken broth (link)
1/2 cup hot sauce (such as Franks red hot) *
1/2 cup heavy/whipping cream
1 cup cheddar cheese
4 oz cream cheese, softened
4 ounces blue cheese (optional)
2 cups chicken, cooked and shredded or sliced
1 tablespoon ranch seasoning (optional) **
2 green onions, thinly sliced

directions

Start cooking the pasta as directed on the package.
Melt the butter in a large pan over medium heat, add the onions, carrots and celery, and cook until tender, about 5-8 minutes.
Add the garlic and cook until fragrant, about a minute.
Add the broth, hot sauce, cream, cheddar, cheese, blue cheese, chicken, hot sauce, and ranch seasoning, bring to a simmer and let the cheeses melt into the sauce.
Drain the cooked pasta and mix it into the sauce, along with the green onions, and enjoy!

Note: * Control the heat through the hot sauce. If you like it milder, use less and if you want it hotter, use more.
Option: ** Store bought or make your own with: 1 teaspoon dried parsley, 1 teaspoon dried chives, 1 teaspoon dried dill, 1 teaspoon onion powder, and 1 teaspoon garlic powder.
Option: Omit the chicken for vegetarian.
Option: One-pot: Make it one-pot by cooking the pasta in the same pan! In step 4, add 3 1/2 cups (instead of 1 1/2 cups) of broth and the pasta and simmer until the pasta is cooked, about 10 minutes, mixing every few minutes.
