BBQ Chicken Stuffed Zucchini

Zucchini ‘boats’ stuffed with BBQ chicken, onions, peppers, and corn, topped with plenty of melted cheese!

ingredients

4 medium zucchini
1 tablespoon oil
1/2 pound chicken, cut into small pieces
1/2 cup red onion, diced
1/2 cup red bell pepper, diced
1/2 cup corn (fresh or thawed)
1/4 cup hot peppers, sliced or chopped (optional)
1/4 cup BBQ sauce
1 cup cheese (cheddar and/or monterey jack), shredded
1 tablespoon cilantro, chopped (optional)

directions

Cut the zucchini in half lengthwise, and hollow them out (using a spoon or melon baller) until the zucchini is about 1/4 inch thick, reserving and chopping the zucchini from the inside.
Heat the oil in a large pan over medium heat, add the chicken and cook, about 6-8 minutes.
Add the chopped zucchini, onion , and pepper and cook until tender, about 8-10 minutes.
Add the corn, hot peppers, and BBQ sauce, mix and turn off the heat.
Stuff the chicken mixture into the hollowed out zucchini halves, sprinkle on the cheese, place them on a baking sheet, and bake in a preheated 350F/180C oven until the zucchini is tender, about 30-40 minutes.

Option: Add 1/2 cup pineapple, diced!
Option: Add 1/4 cup bacon, cooked and crumbled.
